Gluten Free Apple Cake

Spring has started. 

Let me say that again....

Spring has started! 

This past week I've been waking up to glorious rays of sunshine.

I'm daydreaming about long walks through lush green forests...

...swimming in lakes...

...eating fresh strawberries...

...foraging wild foods...

...and waiting until the apple trees in front of our house are ready to be picked. 

To invite all this goodness into our lives I made a delicious Gluten Free Apple Cake yesterday. 

Do yourself a favour and give it a try! 


2 ripe bananas
2 large apples
1,5 cups gluten free oats
4 tbsp coconut oil
1/2 tsp vanilla
1 teaspoon cinnamon

Blend the bananas with 1 apple until smooth.
Add in the gluten free oats,  coconut oil and vanilla. Blend.
Cover the bottom of a cake pan with parchment paper and pour in the batter.
Top it with thin apple slices and lots of cinnamon. 
Bake for 25 minutes or until golden brown on 225 C / 425 F. 

Try to leave it until it's completely cooled off. I failed to do that.
